Three Ridings Coffee "A Mouse's Tale" Retail Coffee - 180g

A Mouse's Tale takes its name from the shape we aim to see when properly extracting espresso. It's our house-roast espresso blend that's handcrafted in Yorkshire and features coffees from three different origins, each of which is roasted separately, then post blended.

This creates a finished product that both highlights and compliments the unique flavours from each varietal. The blend consists of a Brazil (natural) 17/18, NY2/3, SSFC, a Vietnam (natural) Robusta and an Ethiopia (fully washed) Yirgacheffe Konga.

Pairing these coffees together creates a well-balanced, full-bodied cup boasting tastes of chocolate, stone fruit and nuts.

 

A little more about the Yirgacheffe -

Our Ethiopia Yirgacheffe Konga is sourced from the Konga cooperative - one of the networks of cooperatives in the Yirgacheffe region belonging to the YCFCU (Yirgacheffe Coffee Farmers Cooperative Union). It's 2400 smallholder members distinguish themselves with their impeccable attention to detail in coffee processing.

The farmers hand-sort between the unripe and overripe cherries. The correctly ripened cherries are then pulped with a 5-disc Aagaarde pulper and wet fermented for 24-36 hours. After some sorting based on density, the fermented coffee is then washed in clean water before being dried for two weeks on cloth drying beds. Workers cover the coffee both at midday and at night. Once it's dried, the coffee is then screened 14 and up.
